Good Recipes

I recently tried out two new recipes that were worth passing along. The first is a simple, quick, easy, yummy breadsticks recipe which is also a pizza crust recipe.


1 1/2 cups warm water 1/2 tsp salt
1 Tb yeast 3 cups flour (white, wheat, or combo)
2 Tb sugar
2 Tb olive oil

Dissolve yeast in water. Add sugar, salt, and oil. Mix in flour. Knead for 3 mins. Let dough rest for 10 mins. Roll flat and cut into sticks. Melt some butter on a cookie sheet and dip dough in as you lay them out on the sheet. Can top with seasonings or cheese. Bake at 400 for 20 mins.


The next recipe was passed along by my sister in law Ericka. It is a copy cat of Cafe Rio's pork salad, including the dressing! Now, if someone could only reproduce the tortillas we'd be set! By the way, I've had another recipe for sweet pork but this new one is much better!

PORK (do the night before)
3 1/2 - 4 lb roast
2 T brown sugar
1 tsp cayenne pepper
2 tsp cumin
1 tsp salt

Mix sugar and spices together and rub on pork. Put in crock pot, fat side up, on LOW. (My crock pot seems to cook a little on the hot side so I turned it down to "Keep warm" for a few hours here and there throughout the process to keep it from drying out.)

The next morning add:
1 can coke
1 cup chicken broth
2 cloves garlic, minced
1 small onion, chopped

About an hour before serving shred roast and add:
1 1/2 cups brown sugar

RICE
2 cups rice
4 cups chicken broth
1/4 cup fresh cilantro, chopped
1 lime squeezed for juice (can add more to taste)

Cook all together (rice cooker works well)

DRESSING
1 pkg Hidden Valley Ranch salad dressing mix
8 oz salsa verde
2 medium garlic cloves
3/4 cup mayo
3/4 cup sour cream
1/4 tsp tabasco sauce
1/4 - 1/2 cup chopped cilantro

Mix in blender. Squeeze in lime juice to taste. Chill for several hours.

Assemble on top of a tortilla (the ones you bake yourself are obviously best) with beans, romaine lettuce, tomatoes, guacamole, cilantro, cheese, and sour cream.
